Córdoba confirms what Buenos Aires already hinted at: Argentina is one of the easiest countries in the world for someone with coeliac disease. The country’s second city has 9 verified addresses in our database, 8 of them entirely dedicated — and above all, a “sin TACC” culture (free of wheat, oats, barley and rye) driven by the most advanced coeliac law in the world. Here, gluten-free isn’t a niche: it’s a right written into law, and you can feel it on the plate.

The gluten-free empanada exists — and it’s a local one

It’s the symbol of the city: Lo de Jacinto Sin Gluten (4.8★), in the Don Bosco neighbourhood, is the very first fully gluten-free outlet of the Lo de Jacinto empanada chain — eleven varieties of empanadas, plus pizzas, tarts, pasta and desserts, all made in a factory that is itself entirely gluten-free, with a gluten-free beer to wash it all down. When a traditional empanada chain opens a location dedicated to coeliacs, you know local demand is very real.

The other dedicated restaurant plays the Caribbean card: Bogotá Arepas Company serves 100% sin TACC Colombian and Venezuelan cuisine in Nueva Córdoba — filled corn arepas, patacones and empanadas, with no wheat-based ingredients whatsoever. With corn as king in these cuisines, gluten-free here comes naturally rather than being engineered.

Alfajores, chipas and pastries: the city’s great strength

Sweet tooths are right at home here, with four dedicated bakeries. Gisela Mondino Pastelería Sin Gluten (4.6★, over 1,500 reviews!) is the city’s most acclaimed address: its founder adapted her own cooking to coeliac disease before turning it into a fully gluten-free pastry shop and café — cakes, pasta, bread and even wine. Great Chipa (4.7★), downtown, is one of Córdoba’s very first gluten-free addresses, specialising in chipas and a wide range of certified gluten-free sweet and savoury pastries, very highly rated by the local coeliac community.

Antojitos Libre de Gluten, in Nueva Córdoba, is a fully dedicated pastry café, with dine-in, takeaway and delivery. Dozen sin tacc adds cakes, muffins, alfajores, cookies, sandwiches, churros and fresh pasta to the list, popular with coeliacs and a wider clientele seeking quality products alike. And Lüben Felices Sin Gluten has spread across several locations in the city: cakes, tarts, bread, alfajores, cookies and specialty coffee to go, along with distribution to other shops.

Special mention goes to La Sintaquería SIN TACC (4.8★): this fully gluten-free café claims a controlled gluten level under 0.2 ppm — a hundred times below the regulatory threshold — and is home to “El Mercadito”, a small grocery corner stocking pasta, empanadas, pizzas and gluten-free beer. Handy for filling your suitcase.

The ice cream, with a caveat

Deligood, in Nueva Córdoba, bills itself as the country’s first ice cream parlour to offer naturally gluten-free artisanal ice cream — more than 35 flavours, plus a gluten-free café and pastry counter. The venue runs a strictly separated dual kitchen: a genuine effort, but since the kitchen isn’t exclusively dedicated, we cautiously classify it as “gluten-free menu available”. If you’re strictly coeliac, flag your situation at the counter.

Our tips on the ground

  • The phrase to know: “Soy celíaco / celíaca, ¿es apto sin TACC?” The acronym TACC (trigo, avena, cebada, centeno — wheat, oats, barley, rye) is understood everywhere — it’s the official language of Argentine labelling.
  • Look for the official logo: in Argentina, certified products carry the “Sin TACC” label with the crossed-out logo. In supermarkets, the dedicated aisle is often well stocked, even outside the capital.
  • Downtown and Nueva Córdoba hold most of the list: La Sintaquería and Great Chipa downtown, Bogotá Arepas Company, Antojitos Libre de Gluten and Deligood in Nueva Córdoba — several addresses just a few streets apart.
  • Asado is your friend: Argentine grilled meat is naturally gluten-free — just stay alert on chorizos, marinades and sauces, as at a restaurant.
