Colibrio | Bar Pasticceria Bistrot, Corso Vittorio Emanuele, is an entirely gluten-free bar-patisserie-bistro, with a terrace on the corso and a small grocery corner for taking away pasta, biscuits and bread. It is the most versatile address in the city: morning coffee and a meal in the same place. Four independent sources describe it as 100% dedicated — Find Me Gluten Free, which classifies it as a “Dedicated Gluten-Free Bakery”, mangiaresenzaglutine.it, RestaurantGuru and Atly. Note: the official site colibrio.it was unreachable at the time of our check, but the third-party sources converge and no contamination risk is documented.

La Gouterie, Via Vito Fornari 18, presents itself as Bari’s first exclusively gluten-free sweet and savoury patisserie, with creations designed to be indistinguishable from the traditional versions. The claim appears in black and white on the company’s site — “la prima pasticceria dolce e salata esclusivamente senza glutine” — and the address has been confirmed.

The grocery

L’isola Dei Celiaci, Via Prospero Petroni, is a 100% gluten-free grocery: bread, pasta, biscuits and gnocchi for celiacs, with a reputation for a warm and helpful welcome. You do not eat there, you do your shopping — it is the address to know if you are staying in an apartment. The shop has no official site: its status rests on three consistent specialist directories, senzaglutinebari.it, celiachiaitalia.com and Find Me Gluten Free.
