Matera is a straightforward city to read for a celiac: of the 3 verified addresses, all 3 are fully dedicated kitchens. No wheat flour on the premises, no mixed kitchen, no “adapted” menu. A restaurant, a bakery and a pizzeria, all three also dairy-free or claiming certified products.
The city in numbers
Sitting down: the restaurant and the pizzeria
I Sapori Senza Glutine, via T. Stigliani, a stone’s throw from the historic center, is chef Roberto Pergola’s restaurant: an entirely gluten-free and dairy-free menu, close to twenty different pizzas, certified products, in a 24-seat dining room. Four sources agree — TheFork, Sluurpy, Facebook, PagineGialle — describing an establishment exclusively dedicated to gluten-free and dairy-free preparations, with no wheat dish on the menu. The shop is very highly rated: 9.1/10 on TheFork, across 420 reviews.
Puro | Il senza glutine di Sara, via Annunziatella, is the city’s first fully gluten-free pizzeria-lab. Flours, doughs, utensils and the oven are all dedicated — the only setup that keeps a pizza safe from a trace of wheat. Around twenty pizzas, plus bread, focaccia and pastries. Note: the shop does takeaway and delivery only. The official website confirms the 100% gluten-free status.
Bread and sweets
Lotty | Panificio Senza Glutine e Senza Lattosio, via Giacomo Matteotti, is an artisan lab founded in 2023, entirely dedicated to gluten-free and dairy-free preparations: focaccias, panzerotti and sweets from Lucanian and Apulian tradition. Status confirmed by the official website and by Restaurant Guru, where the shop shows 4.9/5 across 104 reviews.
Our tips on site
- Say “Sono celiaco” or “Sono celiaca” rather than “senza glutine.” The word triggers real precautions, even where the kitchen is not dedicated.
- Check the service style before heading over: only I Sapori Senza Glutine serves in a dining room, and it has 24 seats.
- AIC, the Associazione Italiana Celiachia, is the Italian national association; it is the body that issues the label carried by many establishments across the country. None of our three Matera addresses displays this certification: their status here rests on our own source checks.
- Continuing your trip through Italy? Our guide to gluten-free travel in Italy covers the rest of the country, and dedicated kitchen or gluten-free menu, the difference explains what the word “dedicated” really changes.
