Lilac Pâtisserie, 1017 State Street, is the flagship location: an entirely gluten-free patisserie-café founded by Gillian and Alam Muralles, which USA Today ranked among the top ten artisanal bakeries in North America. Eggs Benedict, Belgian waffles, fresh breads and pastries come out of a dedicated kitchen there every morning. Watch the hours: the shop closes at 3 p.m. every day.
The taqueria and the sourdough bakery
Lilly’s Taqueria, 310 Chapala Street, right in the center, serves street tacos with an entirely gluten-free menu, with corn tortillas and a customizable condiment bar. Corn tortillas contain no wheat by nature, but in a mixed taqueria they usually sit alongside wheat tortillas; here the kitchen is dedicated, backed by Find Me Gluten Free, Atly and the National Celiac Association, and the address is confirmed by Yelp — over 1,500 reviews — and TripAdvisor.
Loca Vivant Kitchen, 4141 State Street, is an entirely gluten-free collaborative bakery-kitchen working with local, organic ingredients: sourdough bread, bagels and “unbagels,” whose texture customers praise. Find Me Gluten Free classifies it as a “Dedicated Gluten-Free Bakery,” and according to the listing and to reviews, no gluten-containing product is allowed on the premises.

- Say “I have celiac disease,” not “I’m gluten free.” Even in a fully dedicated city, it’s the phrase that opens the conversation about other allergens.
