The two dedicated addresses

Pasticceria da Ily, via San Francesco d’Assisi, is Trieste’s only 100% gluten-free artisan workshop certified by AIC, the Associazione Italiana Celiachia. The house was founded by a pastry chef who is herself celiac, awarded for the best gluten-free cake in Friuli-Venezia Giulia. Both sweet and savory items are prepared there with no contamination risk, with dairy-free and vegan options. Four sources agree, and none documents any risk. It’s the most solid address in the city.

A World Without Gluten — Un Mondo Senza Glutine — via Antonio Pigafetta, is a 100% gluten-free bakery: breads, pastries, cookies and desserts made with no trace of wheat whatsoever. A few tables let you sit down for breakfast or lunch on site, in an atmosphere praised by celiac customers. The official website confirms it.

The mixed gelateria

Gelatodamare, via Gabriele Foschiatti, by the sea, offers a full range of gluten-free flavors that its official website describes as free of contamination. That’s more serious than average — but let’s state the risk plainly: the house also serves classic ice cream and desserts containing gluten, cookies and cones included. The establishment is mixed, not dedicated. Announce your celiac disease, ask for a cup rather than a cone, and have the scoop changed.

  • Say “Sono celiaco” or “Sono celiaca” rather than “senza glutine”: it’s the word that triggers real precautions, useful at Gelatodamare as much as anywhere else in the city.
