Pistoia has 4 verified addresses, 3 of them fully dedicated kitchens. The profile leans toward baking: two of the four addresses work with gluten-free bread and pastry, a third makes dedicated sandwiches and fried food, and the last is a wine bar with a mixed kitchen. No certification is established across these four addresses: the status rests on cross-checked sources.

The two dedicated houses: bread and pastry

Caffè Valiani senza glutine, piazza Leonardo da Vinci, is a historic pastry-bar in the city, entirely gluten-free: a wide choice of sweet and savory items for breakfast, an afternoon snack or a quick lunch, plus take-away pizzas. Here, everything in the display case can be taken without reading a label. Confirmed by the official website, two specialized directories and the shop’s Instagram account; rated 4.9/5.

La Diligenza… in, Viale Adua, is a pastry-bakery, 100% gluten-free: pastries, fresh bread and cakes, frozen products, and orders taken for birthdays or events. It operates as a dedicated workshop, and no contamination risk is documented beyond that setup. Find Me Gluten Free explicitly lists it among Pistoia’s dedicated addresses, and two specialized Italian sites classify it the same way.

The fried-food stand, and the wine bar not to confuse it with

MOVE EAT - cibo in movimento, Via Marini Marino, is a small food stand-restaurant set up in the Parco della Rana: gourmet sandwiches and fried food — squid, shrimp, anchovies — entirely gluten-free, with a monthly special sandwich that changes regularly. The dedicated fryer is what makes the address valuable, since it’s almost always the weak point elsewhere. One methodological caveat: independent sources are scarce here, beyond specialized directories, though nothing contradicts the status.

Vitium, Via Roma, is a wine bar in the center where several dishes — bruschetta, schiacciate, desserts — come in a gluten-free version clearly marked “GF” on the menu. But the kitchen stays mixed: homemade bread and pastries are made with wheat, flour circulates in the same space, and cross-contamination from airborne flour is a real risk in this kind of venue. We found no separate workshop and no certification. For a strict celiac, the address is worth discussing at the counter before ordering.

Our tips on site

  • Say “Sono celiaco” or “Sono celiaca.” In Italy, the disease is very well known and the word triggers real precautions, much more so than “senza glutine.”
  • At Vitium, the “GF” mark on the menu is not a guarantee of a separate kitchen. It’s the only one of the four addresses where you should ask questions before ordering.
  • AIC, the Associazione Italiana Celiachia, is Italy’s national association; its dining-out program lists trained establishments.
  • Moving on elsewhere in Italy? Our guide to gluten-free travel in Italy covers the rest of the country, and dedicated kitchen or gluten-free menu, the difference explains exactly what separates Vitium from the other three.
