Zaragoza appears on no list of coeliac destinations, and that is a mistake. Our database counts 9 verified addresses, 8 of them fully dedicated — places where wheat flour never enters. The ratio is unusual: out of nine, only one runs a mixed kitchen. The local scene owes a great deal to the Asociación Celíaca Aragonesa (ACA) and its «Aragón Sin Gluten» network, which lists and trains venues across the region. You feel it on the ground: in Zaragoza you don’t hunt for one adapted dish at the bottom of a menu, you pick an entire bar.

Tapeo in the old town, without a trace of wheat

This is the city’s real feat: four fully dedicated tapas bars, all in or near the historic centre. La Jaula De Grillos (4.6★, more than 1,100 reviews) opened the way back in 2016 as Aragón’s first 100% gluten-free bar: croquetas, pizzas, crêpes, burgers — with no cross-contamination risk, because there is nothing to contaminate. The room is small and the Repsol Guide has singled it out, so book ahead.

On Calle Estébanes, in the heart of the El Tubo tapas district, Restaurante El Truco (4.4★, close to 2,000 reviews) applies the same rule to a classic tapas menu: mushroom, ham or chicken-liver croquetas, pizza, rice — and crucially the bread and the beer too, which is exactly what is missing everywhere else. The house has earned a Repsol Solete.

More recent, NEUTRO GLUTEN FREE (4.9★) is an Andalusian fry house on Calle de Santiago: calamari, anchovies, fried tapas, in an entirely gluten-free environment. The detail that matters: deep frying is the single most dangerous move in a Spanish kitchen for a coeliac, since shared oil carries flour from one dish to the next. Here the question simply does not arise. Finally, on Calle de la Universidad, Birrosta (4.8★) is a craft brewpub whose entire menu is gluten-free — boards, sandwiches, burgers, homemade desserts — with several gluten-free beers on tap, which remains rare anywhere.

Two gastrobars outside the centre

Away from the Casco Antiguo, two tables widen the repertoire. Urbanita Gastrobar (4.7★), on Calle del Dr. Casas, is entirely gluten-free from the tapas list to the tasting menu, with declared attention to other intolerances as well. And Llima Gastrobar, a short walk from Paseo de Sagasta, plays the Valencian card: oven-baked rice, prawn rice, black rice, homemade paellas, desserts included — a recent addition to the Aragonese gluten-free network.

Bread and cakes

Two workshops complete the city. Pastelería La Guinda del Pastel holds the best rating in our selection (5★, 288 reviews): a 100% gluten-free bakery and patisserie in a baroque setting — buttoned armchairs, a piano, mirrors — that also covers lactose-free and vegan needs. On Paseo de la Gran Vía, La Mar de Cookies makes a gluten-free and lactose-free range in its own obrador.

The one mixed kitchen

It deserves to be named for what it is. Restaurant La Tagliatella, on Plaza del Emperador Carlos, offers a gluten-free menu — pasta, pizza, desserts — but the chain’s official allergen sheet states that every dish may contain traces of gluten, since kitchens and utensils are shared. Airborne flour, common worktops: for a strict coeliac this is not comparable to the eight dedicated addresses above. Useful as a fallback, provided you know what you are accepting.

Our tips on the ground

  • The phrase to know: «Soy celíaco / celíaca — ¿esto lleva gluten?» Add «¿la freidora es solo sin gluten?» if you order anything fried outside a dedicated venue.
  • The associations: nationally, FACE (Federación de Asociaciones de Celíacos de España) issues the «Controlado por FACE» control mark; in Aragón it is the Asociación Celíaca Aragonesa (ACA) and its «Aragón Sin Gluten» network that list venues — none of our nine Zaragoza addresses currently carries FACE certification itself.
  • The Casco Antiguo is enough: El Truco, Birrosta, NEUTRO and La Jaula De Grillos are all within walking distance; staying in the old town settles the question of meals.
  • Beer is never a given: in Zaragoza, El Truco, NEUTRO and Birrosta serve gluten-free versions. Everywhere else, ask — a standard beer contains malted barley.

Every address cited has been verified at source: existence, gluten-free level, contamination risks. All 9 are on the Nutrixe map — and if your Zaragoza favourite is missing, suggest it.
