We tend to assume that “gluten-free” is decided when the ingredients are chosen. In reality, much of the risk plays out afterwards, in the kitchen. This is what’s known as cross-contamination, and it’s the blind spot of many well-intentioned establishments.
What we’re talking about
Cross-contamination is the unintentional transfer of gluten into a food that didn’t originally contain it. No recipe is at fault: it’s contact, direct or indirect, with a source of gluten. For someone with coeliac disease, a few milligrams are enough to trigger a reaction.
The most common sources
They are almost always the same, and rarely visible to the customer:
- Wheat flour in the air. As soon as bread is kneaded or dough is rolled out, fine particles float in the air and settle on surfaces, dishes, and food. This is the most underestimated form of contamination.
- Shared surfaces and utensils. A cutting board, knife, toaster or tongs that have been used for regular bread will transfer gluten.
- The shared fryer. The same oil bath is used for breaded products: fries come out contaminated.
- Shared cooking water. Water used to cook wheat pasta is not neutral for gluten-free pasta.
Why a dedicated kitchen changes everything
In an establishment that is entirely gluten-free, none of these sources exist. There’s no wheat flour in the air, no suspect utensil, no dual-purpose fryer. It’s the only setup that offers real peace of mind to the most sensitive individuals.
A mixed kitchen can make a real effort, separate its utensils, dedicate a zone. That’s commendable and often enough for a mild sensitivity. But zero risk can only be promised by a dedicated kitchen.
