Fresno counts 3 verified addresses, including 2 kitchens with no wheat flour. Only one real dedicated table, a bakery that works with oats — the most important reservation in this guide — and a third address that advertises gluten-free without any independent source confirming it.

The two wheat-free kitchens

CDT Cocina, 805 East Olive Avenue, is a family-run 100% gluten-free Mexican restaurant: more than a dozen varieties of house-made tamales, tacos and margaritas, in a clean, warm setting. The official site confirms it, and its Yelp listing is very well rated. Our sources even present it as the town’s only dedicated address, and it is the only 100% gluten-free one on our list.

The Bakery by Indulge Right, 5096 North West Avenue, at the corner of Shaw and West, is the sister bakery to the one in Clovis, billed as “the only 100% gluten-free bakery in the Central Valley,” also with keto, vegan and diabetic-friendly options. The reservation to know before going: the house’s site notes the use of oats (and nuts) in some recipes. Outside a certified supply chain, oats are almost always contaminated with wheat, and some celiacs don’t tolerate them even certified. A dedicated kitchen isn’t enough on its own here: ask product by product. Open Wednesday through Sunday, 7 a.m. to 3 p.m.

The table that advertises gluten-free

Raw Fresno, 2405 Capitol Street, serves raw, plant-based cuisine: wraps, tacos on cassava tortillas, raw pizza and organic salads. The official site lists “Gluten Free” among the attributes of the entire menu, alongside organic, plant-based, raw and keto. But the establishment advertises gluten-free and we found no independent source confirming it: no specialist listing, no third-party reviews. We have therefore classed it as an identified menu, not a dedicated kitchen: state your celiac disease when ordering.

Our tips on site

  • Say “I have celiac disease,” not “I’m gluten free”: only the first phrase is understood as a medical constraint.
  • The national reference bodies are the Gluten Intolerance Group (GIG) and Beyond Celiac. None of Fresno’s three addresses carries a certification.
  • Three separate trips: East Olive Avenue and Capitol Street near downtown, North West Avenue further north.
  • For the rest of your trip, our guide to gluten-free travel in the USA, and dedicated kitchen vs. gluten-free menu, the difference, which separates Raw Fresno from the other two.
